Very nice boss. I like to cross hatch the skin to render a bit more fat . Toss some cherries in with the wine and some butter.

The absolute best way to cook wild duck breasts! Nice job.
There are other good ways no argument, and I enjoy lots of them. But, IMO, this is the best way. Looks like you did them to perfect level of doneness too.

Yes, in the beaks. For the most part.
Will try the cherries n butter.... I hate cherries tho. Maybe blueberries. I like a hot sear and eat. Teal are like small filets

Blueberries, apricots, dried fruit. Peaches go really well. While letting the breast rest a bit get rid of most of the fat, toss the fruit in the pan, bit of your wine high heat boil, scrape, toss butter in and swirl. Done by the time you are ready to slice the breast. Good stuff. Just to mix things up. I've got a sack I need to cook.
