Conan is about as solid as it gets.
Same for The Mission.
Both are almost as important to the films as the actors.

The Natural and Braveheart are in second place.

I came to post this. The Anvil of Crom is my all time favorite movie theme. It makes me want to crush my enemies, see them driven before me and hear the Lamentations of the women.
The Right Stuff by LSU alum Bill Conti is also pretty good, as is pretty much anything by Ennio, especially the love theme from Cinema Paradiso.

Purely for the music and score being a "character" in the film, if you will - some of my favorites:
Patton
Outlaw Josey Wales
Bladerunner
Goodfellas
True Romance

Might be cliche, but I'm still impressed with Williams' score every time I watch Star Wars. Wouldn't even be close to the same movie without him.

Jurassic Park
The Natural
Blackhawk Down
There are so many scenes in this movie driven by the soundtrack. Its amazing how a simply couple of notes on a piano can perfectly capture the emotion.
