There might be a good bit of these cars around today but in 20 years you might be hard pressed to find some of these in good and original condition.
And special edition stuff like Rousch will be even harder.

By a basic "appreciates in value" standard of collectibility, there are a ton of modern classics.
^^^ Definitely the GT, but also most other iconic supercars of the last 30 years...Bugatti EB110, Jaguar XJ220, Countach, McLaren F1... and especially F-Cars. The Enzo had a price tag of about $670,000 in 2002 and a delivery-mileage car now goes for almost $3 million.

The still relatively high value of the B-body Impalas from the mid-90's say they have some collectibility.
I am excluding all exotics. Just because most exotics remain collectible.
Other cars that may remain desirable would have to be the BMW 8 series from the 90's.

also the Fox Body mustang seems to sell for more than the later 90's Mustang.

94 Impala has a chance as they only made 20,000 or so, lot's of 95's and 96's are still out there but I've only seen one 94 on the road that I can recall.

Lots of good suggestions, I'll say Jeep CJs, although they're almost out of the 30 years.

Totes there. But hardly see those here in the states. Funny first time I saw one outside of Gran Turismo was in Jamaica on honeymoon. The new wife didn't share my enthusiasm.
