Not sure about 4LSU02, but I smoked 6 racks of baby backs for the 4th using the 3-2-1 method and they turned out amazing

From his pics it looks like he uses baby back pork ribs which are great, but a good smoked beef rib is fantastic, although a bit more tricky to smoke.

I have noticed that the actual quality of the baby backs varies a good bit.
Is there any trick to getting good ones?
I'm thinking of just going to Saia's and asking for them.

Saia's has excellent baby backs and will remove the membrane right there for you. I get mine from there 9 times out of 10.

Lots of variance in the amount of meat on a baby back, unlike the spare rib where the amount of meat on the rib is determined by Mother Nature, a baby back's amount of meat is determined by how it is cut, the butcher can trim them very close and have a fuller loin or can cut them very meaty and not have as much loin.
So be careful when you find them on sale , I have had good luck at SAMs but be sure and check them out well

That's been my problem, I think.
I'll open up the pack and they look like crap. I always remove the membrane, but sometimes they have some kind of gristle or something in them. Then they cook poorly, IMO.
