Well, it's probably just variation between batches. It's a blended product where they try meet a certain balance of flavors each time from living lambics with varying character, so there's only so consistent they can make it. Not to mention the effect of the age of the bottle after re-fermentation.

Tilquin Gueuze and Drie Fonteinen Oude Gueuze are both great examples that he often carries. I'd start with one of those.

It was actually a kit and my first homebrew. Came out better than I thought it would. Actually it came out pretty good. Homebrewing was more involved than I thought it would be.
