Sriracha sauce has gained a recent surge in popularity. Does anyone have any idea why?
Also, what is your favorite uses for this eastern hot sauce?

The recent boom in Vietnamese food/pho?
I almost always use it when cooking eggs.
ETA: A bartender at a local craft beer bar in Boston said that a Massachusetts brewery recently released a test Siracha Scotch Ale.

I think it's got a different flavor from the vinegar based hot sauces. It's become a go-to in my sweet and spicy marinades, always mix it with honey and a bunch of other shite.

I prefer this instead.
Of course, Pho is the correct answer.

I keep a bottle of it just as it comes from the store and then I take another of it and mix it half and half with mayo. The spicy mayo is great on fish tacos or as a dipping sauce for fried shrimp and stuff. The spicy mayo also makes a great marinade for lean pieces of meat that you are going to grill.

That must have been it.

Pizza, eggs, and ketchup for me.

I use it in my seafood dipping sauce specifically, and in general, when I want to add a kick to something.
I'm using less and less Tabasco red sauce. My go to sauce is Louisiana Gold Green Sauce, but it is mild (and flavorful). The Rooster sauce is for real kick.

I've never liked hot sauce like Tabasco because it's always been too vinegary. I assume Tabasco branching out into more flavors of hot sauce is a reflection of demand for spice with different flavor.

It goes great on hummus.

Mix it in with my eggs after I beat them. Also love it on hamburgers

Popularity probably related to the sugar and garlic ingredients in addition to the salt, chile and vinegar.

Great idea, I imagine you could do the same with ranch and get a good product.
As to the OP, I'm not sure what makes you think Sriracha has gained popularity recently. It very well could have I just haven't seen anything that suggests that. It gets brought up on this board a lot but this is a food board and I would hope a food board could recognize that sriracha is delicious.
