NY Strip vs Fillet

Which is your favorite cut? I feel that a Fillet is over rated and championed by those who dont know any better. Its a Fillet it should be tender!On the other hand a well prepared NY Strip is a true steak lovers paradise.

Why limit yourself? Get a porterhouse and have both.

Filet is harder to screw up. If my coals are too hot and it fringes on medium, it's not ideal, but still damn tender and juicy. I think a slightly overcooked strip doesn't fare as well.... Also, I tend to like to dress-up a strip more, with peppercorns or bleu cheese. With a filet, to me the meat can stand alone. It almost has a buttery texture and flavor without any help.

Just depends upon what your fishinf for Degas. I can produce the parts of a tenderloin in so many ways, A couple sitting at a table with a chateau briand presented will go a tad crazy later.

You're right that a strip well prepared strip is traditionally the steak for true steak lovers. A filet doesn't have the same amount of flavor without a topping.

depends. Dry aged i would go for strip. if not probably filet most of the time. Good prime bine in ribeye mixed in too.

NY Strip is my favorite steak... I can't remember the last time I ordered/cooked a filet for myself...

I preferred filet for years. Now I can't decide, so I generally alternate.

I'm curious where you're going on this one. The large side is a strip steak, the small side is tenderloin. Sure, the porterhouse/t-bone will cook differently than either the strip or the filet because they have the process of the vertebra left in which will affect how it cooks and will color the flavor of the meat, the t-bone more so than the porterhouse because it has a higher bone to muscle ratio, but the two sides of the porterhouse/t-bone are from the same muscle groups as each of the standalone steaks.

Not crazy about the NY strip but the filet is good. My fav is the ribeye, med rare.

i dont like strips..seems there's always some gristle or tough parts no matter where i order it.

and i love me some filets..just not all the time. the filet has a definite taste that is different..almost like drinking coffee with chikory..its good as a treat occasionally but i couldn't drink cafe du monde coffee every day of the week.
apples and oranges imo to compare strip and filet.
