Chopped onion, sliced mushrooms, bacon grease.
Heat grease and sauté above. Add Hormels Dried Beef chopped ( and rinsed in cold water to remove most of the salt) and sauté a couple of minutes then add a big tablespoon of flour and make a blonde roux, about four minutes then add about two cups of milk, bring to a boil, reduce heat to simmer and stir and let cook for five or so minutes. Serve over a fathead bisquit or toast.

Or, heat it and sauté some nice shrimp then toss with a bit of pesto and pasta.

I can't believe this...it's the best seasoning when cooking vegetables; peas, beans, greens, squash, etc.
I like that idea.
It can also be used it when cooking shrimp and grits and other like dishes using rice.
That's a great idea, but ours never sits in the fridge long enough. I'll remember that if I ever have an over abundance.

Seriously...here is what you should do. Get a teaspoon...scoop out teaspoon sized balls of grease and put them in a zip lock bag. Place the balls of bacon grease in the freezer. Whenever you need the grease, pull out a few grease balls and melt them in the skillet.
That's a great idea, but ours never sits in the fridge long enough. I'll remember that if I ever have an over abundance.

Bacon grease or hog lard is a staple in southern cooking.
Use it as a base to cook/brown green beens, cabbage, lima beans, peas.
Current studies are showing hog lard from grass fed hogs contain more omega 3's than olive oil.
Boil some baby russet potatoes for 15 mins, dice the potatoes and then in a frying pan, heat your bacon drippings to med-high and brown the potatoes..
Saute onions, mushrooms.. Use is in the bottom of the pan when you scramble eggs..
