Ideas for food for fundraisers

Easy to portion.
Fairly Cheap to make.
It doesn't have to be industrial sized either.
Group isn't going to be too too big.

Jambalaya usually attracts people. Maybe throw in some salad and a roll.
Grill hot dogs or hamburgers--you can get them by the case at Sam's pretty cheap.

Hard to beat pastalaya or jamabalaya, but don't cheap out and used parboiled rice with no seasoning. I could eat it 5 days a week but most fundraisers I have supported lately have selected really bad cooks.

For me personally.... didn't grow up here and still working on command of a dish many locals pride themselves on.

The only fundraiser meals I can remember buying were either BBQ, fried fish, or spaghetti.

Fried fish this time of year is definitely a winner, especially on Fridays. If this is being held on a Friday, I wouldn't go with anything but seafood. I was involved concessions for a high school sports fundraiser, last week. All burgers and hot dogs with teams from all over the state. Sold 4 hot dogs and they cooked way more hamburgers than they could sell that night. That was from 3 pm to about 10 pm. On Saturday, they ran out of burgers. Had to go get more from Sam's. Everyone voted to have fried fish next year on Friday. It would have made far more money for them.
The sides mentioned above are good, but you could also go with cole slaw and you must have hushpuppies, in my opinion.

If you are in South Louisiana, the cheapest thing to do is jambalaya/pastalaya and salad/potato salad. If you are doing this up north, go with spaghetti, salad, and roll.

I saw sign today for a corned beef sandwich fundraiser. It's something you don't see down here a lot so it caught my eye and I'm thinking about ordering one. Something in that same line of thinking might be a good idea.

Anything but the "2 onions, a pound of cheap sausage and 50 pounds of rice" fund raiser jambalaya, I just give them the $5 and tell them to keep the food.
I have seen catfish poboys sell very well, even if you're not Catholic meatless Fridays are kind of a tradition in Lent for So. La..
Seafood gumbo would sell, but is too expensive to make and a cheap version would be awful.

I agree with the above. Fried fish is a winner, and you could serve it with a side salad and some greens or greens/salad and some corn bread. But please, don't put iceberg lettuce in there. It's got all the nutritional value of cardboard and tastes about like it too. Save on doing your own dressing and get a better salad together instead.

Many, many people do not know what baked ziti is here.. If you do it for an office, as delicious as ziti and meatballs are.. it probably is not a good idea.
Fried catfish is a good idea for Friday with potato salad, cole slaw a slice of white bread and tartar sauce on the side.

There are folks in north LA who can make great jambalaya (I'm one of them.) and it goes over very good up here.
If you're frying the fish and have the grease hot, go ahead with he french fries instead of potato salad. It takes much less preparation.
Oh and don't forget the onion slice.
