Pistachio Jello Salad

I would personally like to thank the mad scientist at Kraft, who in 1975 created Pistachio Pineapple Delight. Pistachio pudding, Cool Whip, pineapple chunks, miniature marshmallows, diced pecans and coconut. Thank you for the dessert equivalent of gumbo.

Kraft didn't release pistachio instant pudding until 1976. Before that, they were working on different recipes that pistachio pudding could be used with. In 1975, they came up with the recipe, but didn't immediately promote it.

I stumbled across it in a supermarket a few years ago, have only had it once in a blue moon at a pot-luck or party before then.
I couldn't figure out what they put in it to save my life, all I knew was that it was delicious. I'm sure the guy who made it is still around, we need to send him a plaque or something.

never had it (or even seen it), and i have had more than my share of white trash foods.

i am intriqued, b/c this is the type of thing i would have normally eaten way too often.
oooohhh....maybe i never saw it b/c my grandpa grows his own citrus (satsumas, lemons, grapefruit) and always makes "ambrosia" with coconnut and sometimes marshmellows. Might be a redundant dish?

I don't know about New Orleans, but it is definitely Redneck chic. It's staple at Baptist potluck dinners and part of our yearly family Easter dinner. Good stuff.

I also like that shite.. Some people like it some dont. But I think the people that dont have never really tried it. But of course I like Pistachio pudding a lot.

It's not redneck or Southern, but I think all jello/pudding salads have their origins in the '50s and '60s. My Connecticut grandmother always had some type of concoction in her refrigerator, and my mom still eats them.
I love pistachio pudding, but I usually don't like stuff mixed with jello or pudding. This one sounds like it might not be too bad.
I was actually hoping these things would die with my mom's generation--thanks a lot!

Not me. I want them to live. I also don't usually like jello or pudding, but I love aspics and those crazy holiday salads with the cream cheese. I have a recipe from one of my grandmother's that I make for holidays, sometimes. I think my Mom and I are the only two people who eat it, though.

Some in my family used to make it. I haven't had it in years but it's surprisingly good.
I'm not a huge fan of any of the ingredients that go into it but somehow it works.

In my family the Pistachio/Watergate salad is served as a side dish rather than a dessert.
