BEST Deer Backstrap EVER!!

I think its called a "Cajun Football" in Louisiana. The backstrap is stuffed with cream cheese and jalapenos, then wrapped in a pack of bacon and put on the pit for about an hour or so. Best stuff I have ever eaten. Anyone else ever tried that?

i've made this a ton of times.. never have I wasted backstrap on it.. maybe some tenderized front shoulder but never backstrap

wrapping anything with jalapenos cheese and bacon makes it taste good

Awful, considering the cut. I hate when you start digging around in a small, lean cut of meat. Cook it correctly, and put whatever cheese, jalapeno, bacon concoction on top if you want.

I do visit here a lot and I still think its a bad way to cook. I think it is a lazy way to cook, and just bc lots of people do it doesn't make it good.

Let me guess, you thought the oyster stuffed filet mignon was a good idea, too.
