I like Manda sausage, but my favorite is the fresh cajun sausage from Tramonte's...To say that Manda's is crap, when clearly quite a few folks enjoy it, kinda' makes you sound stupid.

For fresh sasauge yes, but I still say the stuff at Tramontes is the same sasauge as Winn Dixie..
The labels are even identical. I have not seen a Winn Dixie brand smoked sasauge.

I love a fresh sasauge on the grill.

When it comes to sasauge, smoked or fresh it all depends on what I am doing with it..
some are great on the grill, other good in Gumbo and others for a jamabalaya.

As for Veron's, good but I perfer Martin's Andouille even though they are owned by Veron's


If I buy Manda's its 15 lbs worth for 15 gallons of Jamabalaya and its got to be 1 per lb cheaper than Savoies or Richards..

The best smoked sasauge for Gumbo in the world is from Meche's meat market in Opelousas, but the stuff is terriable on the grill.

My Dad makes his own smoked sausage so that's ususally what I eat.

gee, I think it was you who once said that the Ralph's Market fresh cajun sausage was the same as well, and when I grilled some from Ralph's they weren't near as good as Tramonte's..Maybe WD's are the same. That'd be cool with me, and probably a little cheaper too.

I think they all make their own but I also think they use the same spices. Tramontes might use a better grade of meat or less fat, I'm not sure.

But someone else posted on here once that a local company packages and sells the spices and labels for the cajun & Italian sasauges that I see all over town bearing that same label.

Agree Tramontes is damn good fresh sasauge, Its been a while since I bought some. But all of them seem to have the same flavor at least.
I would imagine Tramonte would definatly be meatier and better grades of meat.
Lord knows Raplhs ain't got the best grade of meat in town.

A lot of people bash manda sausage on here but I like it. It might not be the best but still a good product in my opinion.

I found some very good smoked sausage in Eunice recently. Lejeune's. It's somked with real smoke, not steamed and injected with liquid smoke like Mandas and most other mass produced brands.

To me the places who still smoke their sausage are the best; however, as some have said, Mandas is pretty good in a big jambalaya pot and it's usually easy to find on sale.

Agreed. For a boil, I'll go plain and cheap, but when it comes to building a dish, I try to use the best I can get...and Manda's ain't it.

I made red beans and rice last night using only Manda products because of this thread. I used 1lb of tasso, and 1lb of Andouille. I have to be honest with you, it was one of the best pots of red beans and rice I've ever made. The tasso, IMO was the star. It was much softer than savoie's, richards, etc. and had MUCH more flavor. It added a great new note to my pot. The sausage did have a little bit of gristle in it, but not more than any other smaller batch brand. It was tender, juicy and flavorful. I will definitely use them again. As for on the grill, I'm not sure, but for a good pot of RB&R - best yet.

And no, there are no leftovers.
