Why do some of y'all Louisianans dust y'all's crawfish?

What is the reason for this? All the seasoning should be inside the shell. The only thing I see you get your hands dirty more.

The Yankees in Shreveport do this. Some places will even bring you a little cup of crab boil on the side if you ask for extra spicy. Not sure the logic. When asked, they say well you taste it on your lips so same thing.

In my experience it’s mostly in the SWLA area and then it’s mostly in restaurants where it’s easier to control the seasoning levels when you’re cooking many batches. I don’t hate it personally. I think folks dramatically overstate how terrible it must be but I don’t personally cook them this way.

Agreed. First time I ever saw this was about 25 years ago in Houston at Ragin Cajun on Richmond. I was horrified.

No they don’t. The only person outside of Houston I’ve ever seen do this was a Cajun in Breaux Bridge.

Dusting is ok as long as you also cook crawfish properly in seasoned water. If you like extra heat I understand dusting for the purpose of making the corn, potatoes, etc really hot

I dust mine.I don’t have a big enough pot to boil say 100 lbs and then let them soak.
I season the water,dump them in ice chest,sprinkle powdered crab boil on them,do 2’nd pot when water comes to boil.Dust those and the start on 3rd and 4th pot.Dust them and start eating from 1st ice chest.
Taste fine to me,more importantly I’ve never gotten any complaint's.
If I’m doing it wrong,so be it.

True, but after dusting, they hit it with some sort of citric acid mix. Usually Lemon Juice/a touch of vinegar. Maybe even a little lime. Let it sit for a few minutes. It dissolves all of the”dust” and the crawfish soak up all of the seasoning. It’s great. But agree with board: you can’t dust without the step to dissolve it.

I’ve been to countless crawfish boils in north Louisiana and Texas and have never seen anyone doing that.

I've only seen it at restaurants in and around Laffy and that was many years ago

Yeah people have probably eating crawfish that have been “dusted” before and never realized it. If done properly like you said let them steam in the ice chest for 10-15 minutes and all the seasoning melts into the shells.
