Can't believe we let him walk, in division at that, for that amount of money. We now need to add atleast one more starting quality IOL and a backup.

This is such an odd thing people always say. We have no clue if we made him an offer and if so for how much, but it could be we did and he just wanted to try to start elsewhere.
We cannot force someone to play here just because we offer the same amount of money. xD

Didn’t the Panthers starting center sign with the Lions? Of course he’s going to a team with an opportunity to start.
This was expected, a bunch of teams needed centers this year.
Need to pick up a good backup guard or draft one, let Ruiz be the backup center.

1yr/$4.75M max value........That seems low. I'd have been more than happy to sign him 2yr/$12M with $8M guaranteed

Well, that is how free agency works. If we don't sign him, he has to sign elsewhere if he wants to play (and get paid).
