Venison Jerky Sticks

Looking to get some venison sticks made, similar to a Slim Jim. Any recs for processor in the BR or Lafeyette areas for these?

I highly recommend Bourgeois Meat Market. If you're a fan of the jerky, you'll love the deer sticks.

Have no clue if they process anything, but I know Indian Mound in Central has some badass jerky sticks

Matthew Courville's in Carencro is good but supperrrrrrr high lol. I brought 8-10lbs to have some made thinking it would've been like $160ish....he called me a few days later and it was like $265. Maybe thats the going rate, not sure.

No he’s high!!! His stuff is good but it’s not that good! First time I used him I had serious sticker shock. I no longer hunt by him so I use another processer until I finish setting up my own stuff.

No wonder I never heard of him and I live in that area. If anyone has a good venison stick recipe I’d appreciate I’d appreciate one. Been experimenting and there aren’t many recipes that can pass the taste test of south Louisiana

Out of curiosity earlier today while in Rouses, I looked at a package of beef jerky and it was priced at $16.99 and weighed 8 oz.

So almost $34 a lb.

I made jerky today using some pork loin cut with the grain and seasoned for 24 hrs. and it turned out damn good.

I usually make beef jerky and use the eye of round roast to make it but that stuff has been $6 a lb. and up for quite a while now. I got the pork loin for $1.47 a lb. 2 days ago at Rouses.

Huge difference in price.

Crosticks from Acadiana Wildgame Processing in Carencro (just outside of Lafayette off I-49). They're so good that I have to try HARD to stop myself from eating an entire pack. I'm gonna get an entire deer made into them soon

They do zydeco (onion + bellpepper) and hot cheese variants. Just amazing

I’m sure I’ve made snack sticks but it’s been a really long time. Summer sausage is very easy to make and very cheap. You can use Boston butt or ask the butcher for beef fat trimmings or pork trimmings, usually can get those for $1.99 or so a lb. It’s been awhile since I’ve asked to be honest. But sometimes they’ll give it to you for free or almost nothing.

Guys make it with the high heat cheese but that stuff is super expensive, I find that just some regular sliced chedder or your favorite cheese (pepper jack, etc) and a slice on your cracker is hard to beat.

Sliced venison trimmings in the dehydrator is super easy also.

I wonder if you can use an air fryer as a dehydrator? On low heat it’s basically the same thing? I know this is a derail to the OP just trying to offer some somewhat related advice

Southern deer processing on the breaux bridge highway is a great place for deer processing and sausage and is reasonably priced. Don’t know about snack sticks though. Smoked sausage and tamales are real good.

i hope you got deep pockets, that shite is expensive AF, dropped off 18 pounds of meat to get snack sticks made and it cost $400.00.

Their website says $8.59/lb with 10lb minimum. What happened there?
