I usually don’t venture out past shrimp tempura and a California roll. I’m going later on and would like to try something different or I’ll just order what I usually do.

See if they have otoro nigiri.
If you don't like that, you don't like raw fish.

Try an eel roll of some kind.
Get a sashimi sampler and see how you like the fish by itself.

Are you interested in American style sushi (rolls) or Japanese style sushi (nigiri is fish on rice, sashimi is fish by itself)?
American style, most places will have a rainbow roll, which has raw fish on the outside and snowcrab on the inside. The fish is usually tuna, salmon, and a white fish like escolar. Crunchy rolls are basic too, although their contents vary from place to place.
Japanese style, the basic tuna, salmon, and shrimp nigiri should be avaialble. Maybe try something like scallops. Tamago is the slightly sweet folded egg. Nigiri gets expensive in the US, so maybe do a chirashi bowl (assorted samshimi over a bowl of rice) the first time you're trying it.
Also, remember that not all sushi is the same quality, and not all sushi places are equal quality either.

Kind of difficult to give advice if you don't tell us how far out you've ventured. I didn't try sushi till my 30s and enjoyed it quite a bit the first time. It's not "fishy" if it's at a legit sushi place, and you top it with a little bit of wasabi and soy (or not). Texture is firm. Very light, very clean, nice fish taste that isn't repulsive at all. The only way to try it is get some pieces of sushi or sashimi. Rolls are going to have all kinds of stuff on/in them, so that's not really a reference.

Tsunami Sushi has the Big Tuna roll, that is my go-to when I’m feeling sushi. I had some really great rolls when I was stationed in Hawaii, but can’t recall their names…

Shaggy dog, Philly, dragon rolls. All delish.

I prefer Nigiri especially Salmon Nigiri.

Salmon and tuna nigiri are solid choices for someone who is new to sushi. If you don’t like those, just stick to California rolls and such.
I love a good roll with salmon, avocado, and (sometimes) cream cheese. Everybody has them but call them different names.

Many people don't like sushi because of the texture. If the texture doesn't bother you I'd go with the rainbow roll.

Volcano rolls are usually good at most of the restaurants where I've tried it. Try a deep fried roll for a change; those are really good.

So what did you end up branching out and getting?

Futomaki is a roll with a lot of vegetables and really delicious.

Well, for starters, if you are eating a California roll, you’ve never eaten sushi
Get some nice salmon sashimi and have a small side of spicy ponzu or yuzu to lightly dip the sashimi into , it is a total fricking game changer
