Football: Is it legal to interfere with a player on a lateral?

for example can you tackle the player who the ball is being thrown back too…

Like at the end of the game… when the quarterback ain’t got the arm to get it downfield… can you interfere with a player who the ball is being tossed back too

You can block them but only legal to tackle the guy with the ball.
Your hypothetical is like asking why not have your slowest DB tackle the fastest receiver so he doesn’t have a chance to catch a pass.

It's a lateral, he can be hit. Kinda like when they pitch the ball back to the runningback, you can crush his arse before the ball gets there.

You can definitely hit them. If, for example, an option (think triple option, not option routes) was being ran by the offense, the defender responsible for the pitch man can lay the RB out before the ball is pitched. Or as the ball is being pitched. Or after pitch man has caught the ball. That's how I was taught to play it in HS because we played a lot of option teams and I always had pitch man responsibility at corner.
I'm also almost certain you can actually tackle him. I think it's only defensive holding if the offensive player is running a route on a forward pass play. Although, I could be wrong about that.

It's technically possible for any defensive player to hold but it's rarely called because it's hard to see unless it's egregious. For instance if a D lineman grabs a pulling guard it's a hold.

There’s no pass interference on a lateral, so you can hit them before the ball gets there. But if you wrap up and tackle someone other than the ball carrier, its defensive holding. There’s exceptions for tackling a RB that doesn’t have the ball on play action if the player is still behind the line of scrimmage and inside the tackle box.

I believe once the ball is touched by an eligible receiver, it's no holds barred if the ball is in the air.
Definitely an interesting question that undoubtedly the case manual for football has covered.

Yes it is legal. You can push a RB down, who’s behind the LOS, on a screen before the ball ever gets to him. Defensive players who sniff that out early enough do that exact thing.
