Nachos - Give me your Nachos Recipe

Ive been making Nachos every week. It is truly the gift, that keeps on giving.
I start with Marinating some Jerk/BBq Chicken.
I use 3 different types of chips, Nacho Cheese, Round Tortillas, Cool Ranch.
Green Chilies.
Shreaded cheese of your choice.
Then BBQ Sauce, layered and Spread Leaisurely to your liking.
Jalapenos.
Then some type of sauce with it.
They are the best thing I usually eat all week.
And I have been eating to whole plate.

I buy the Guerrero white corn tortillas and fry my own chips (Game Changer), but past that I just make homemade salsa, homemade guacamole, or some white queso from Costco to eat with them.
For me it really is about the chips, covering with a bunch of stuff just isn’t what I want. I want the crunchy texture and you can only maintain that by dipping.

Bag of Tostitos
Jar of po folks queso blanco
Jar of brookshire taco sauce
Bag of fajita chicken strips
Sliced jalapeños
Cup of Mexican blend shedded cheese
Bake frozen fajita chicken strips season generously with Tajin. Remove chicken from oven and layer everything else on top of chicken and stick back in oven until shredded cheese begins to melt. Enjoy.

Oven at 350-400F, foil lined pan for easier clean up:
Your favorite chips
As much shredded cheese as possible
Wait until cheese is nearly melted then add the following:
Already cooked meat (that's been heated up in the microwave or stove)
Pico de gallo
corn
black beans
queso
Your favorite hot sauce
Let everything warm up while the cheese finishes melting. Then top with sour cream, guac, and salsa
Your favorite chips
As much shredded cheese as possible
Wait until cheese is nearly melted then add the following:
Already cooked meat (that's been heated up in the microwave or stove)
Pico de gallo
corn
black beans
queso
Your favorite hot sauce
Let everything warm up while the cheese finishes melting. Then top with sour cream, guac, and salsa

6-8 Boneless Skinless Chicken Thighs
1 C Olive Oil
Juice of 2 Limes
1 Jalapeno
1/4 Cup Cilantro
6 Cloves Garlic
1/2 C Soy Sauce
2 Tbsp Each – Salt, Pepper, Cumin, Cayenne, Chili Powder, Oregano, & Smoked Paprika
Combine everything in a Ziplock bag and marinate in the fridge overnight.
Grill the chicken until 165°, then chop it up, squeeze a lime or 2 over the meat.
Use whatever chips you like, spread the meat over the chips and top with fresh cilantro, red onion, queso, jalepeno's, pico and sour cream.

I miss Izzo's steak nachos, no beans no rice. There seem to be some decent analogues at a couple of local bars, but I'm not eating that shite at a bar. I need the shame confined to the privacy of my own home.

I love fancy nachos like the ones mentioned here... but these are an old school favorite for me.

This seems excessive. Nachoes should be a treat. mid afternoon weekend snacker after a hard day in the yard with a beer, while you cook dinner.
I dont hate on it. But there are plenty of other food items that are gifts.
Have you ever made stove top popcorn and added different seasonings than butter or salt?

I saw a video the other day where they layered chili, meats, beans, cheese, etc on a sheet pan without nachos and then baked it and then slid it steaming hot perfectly onto a sheet pan of non soggy chips.
Seems like one of those silly “hacks”, but it looked pretty darn good.
