I had the opportunity to take a Nilgai earlier this year. It's absolutely the best wild game I've ever eaten. It's mild and buttery.

I'm not much of a cook, so far I've just been putting it in a skillet with olive oil, jalapeños and onions.

The results have been spectacular. If you get a chance to hunt one. Do it.

My brother or me typically shoot one or I let a buddy shoot one and we split the meat. We try not to run out of Nilgai meat because it’s great stuff but I can’t eat a large bull by myself with the whitetail and axis I have.

It is amazingly good meat.....that's why Texas outfitters charge big bucks for a Nilgai!

My hunt was in January. The guide showed me several young Nilgai that couldn't take the sudden cold spell.

For some reason its odd to me that a mammal on this earth just can't take even a little cold. Like its a tropical fish or something.


Hopefully one day when global warming has increased enough, my children will be able to hunt them in Ellik.

Been hunting them for a while now. Used to be a cheap meat hunt. But they have become very popular.
Great table fare.
My favorite is doing a barbacoa with a nice roast. Lord have mercy!
Going in December to stock up on some meat.

They all over most high fence places in Texas. I call them “Big and Ugly”. I’ve heard the hype and wonder if at the end of the day what the price per pound is and are they better than good beef? You can still buy beef on the hoof for $2 a pound. Nilgai are not much challenge to hunt or shoot in the US. And you got to butcher and wrap etc. What does anyone get out of shooting them. Now I’ve seen other exotics that are worthy prey.

Cooked some tonight in a similar fashion. Great stuff!

We used to bring some back to MS and have a guy around here make some sweet heat sausage with it and that stuff was always a hit at cookouts.

You obviously have not really hunted them. The damn things are probably the most skittish of all the exotics and it doesn’t take much and they are running. Plus you damn near need artillery to bring one down.

True and they don’t bleed much. Tough to track in the thick bush and even if you find it those f*ckers are so heavy
