I like Iverstine's fresh sausages for the grill, holygrale swears by The Meatatory. I use smoked sausage for gumbo.

Fresh sausage isn’t recommended for gumbo. That’s why God made smoked sausage. But to each his own.

Drive across the river to Bergerons in Port Allen.
Smoked Green Onion Sausage, Andouille and Tasso, those three makes everything great.
If you go there, get the Chicken Cracklings.
The Stuffed Chickens are also way too good!

TD never disappoints in reading comprehension…man asks for FRESH sausage and gets recommendations for smoked and cooked and scolded for his use of said sausage.

Make the drive out to Benoit's in Addis. They have some really killer fresh sausage.
