Strain the water and toss it in a salad with pepperoncinis, salami, cheese, and red wine vinegar with fresh squeezed lime. Salt and pepper to taste.

A can in red or white beans is a great addition. Taco/tortillia soup. Chili.

Beef and Black Bean burritos.
Two cans black beans, one can Rotel, 1 lb or more of ground beef, browned, add all the usual seasonings (onion, garlic, chipotle or cayene, cilantro, cumin, paprika, salt and black pepper) or just just taco seasoning.
Serve on a flour tortilla with sour cream and monterrey jack.
Pure comfort food.
This dish actually tastes better with 2:1 ratio of black beans to ground beef than with a 1:1 ratio.
You could get fancy and try to simmer a chuck roast and shred it, but the ground beef actually seems to work better.
Edit: also good over rice, also good over rice as a side dish with maybe a little less ground beef, also good with Jimmy Dean Sage Sausage instead of or in addition to ground beef.
Edit 2: also good with tortilla chips as a dip, along with sour cream and cheese, jalopenos, etc.

I use some in my chili. I also make a mean King Ranch Chicken Casserole and it calls for Rotel and I use it in there.
When I grow okra, and I grow a lot of it, I will use a can or two of Rotel when I smother the cut up pods down to use later in soups and gumbos. I'll cut up the okra, dice onion, mince garlic, add a bit of chicken stock and other seasonings to the pot and slowly cook it down until it is done which is usually around 3 hours. Then bag it up in quart freezer bags and save to use later.

I use it when I make tacos.
Chorizo + ground meat, then cook down that in rotel. Add taco seasoning, done

I’ll cook chicken thighs on the stove, chop em up, throw it back on stove with a can of rotel and let it stew for a few minutes. Throw on some cheese to melt. Ill grill some onion/peppers with it too usually,
Put all that in a hard taco shell with whatever toppings.
Its a nice and cheap dinner ill cook once a month.
