I just came back from Walmark…

Saw this in the pork section.

I have seen whole frozen pigs heads and cow tongues at this Walmart.

I have even seen chicken feet, but I heard that was good for chicken stocks because of the collagen.

Ponce, Chaudin, or Gog.
It's great once it's stuffed with pork sausage meat, and then smoked.

Cook some rice!

Cow tongue is way more common than you think. Makes a great gravy with pork sausage

I recently saw some French cooking show where they were cooking something inside of a pig stomach.
All I got.

My granddad loved him some tripe. I walked in his house one day and he was frying some up on the stove. I asked him what it was and just about puked when he told me.

Agree!

Temple meat is about amazing as it gets.
My maw maw used to make homemade hog heads cheese and couldn't get enough of that stuff.
me and my two brothers job was to saw head in half and gouge the eyeballs out before she cooked it down. Smelled nasty as hell but we picked at it afterward.

They only hog head cheese that remotely taste close to hers is Ronnie's.
Not a lot of gelatin.
