Need to make a lot of rice for a 20 gallon gumbo. Any tips for cooking rice in a 5 gallon pot? The pot is flat at the bottom like a normal cast iron. My plan was to cook the rice as I would on my stove? Any other tips?

Get one of those disposable aluminum chafing dishes and use it to cook the rice in the oven. It works really well when having to make large batches of rice.

I use slightly less water than I do when I make a smaller batch. Other than that, no difference.

You could also just cook a few smaller batches to keep it at a level you're comfortable with or maybe put it in separate pots in smaller batches at the same time until you reach your 5 gallon need.

If you near a Rouses you can buy a full pan of cooked rice from the deli for under $20. Get 2 of them and it will be plenty.

You ever try to cook 5 gallons of rice in one pot???? Not as easy as you think and it's easy to overcook some of it and under cook some of it depending on where it is in the pot. Plus, how many people even have a pot large enough to cook 5 gallons of rice???

This for sure. Google ... there are a ton of recipes on cooking rice in the oven. Had an aunt that did this for large meals and it was always perfectly cooked rice.
