Thermapen or Thermopop. Good knife. Roux spoon. Set of small to medium size bowls for recipe ingredients.

I've got a 4 gallon stainless steel pot I use for cooking large volumes of food.
It has a very heavy duty, thick bottom and that is key for me as it helps distribute the heat more evenly and keeps scorching at bay-----it still needs occasional stirring, but not as often as thinner bottom pots.
I got it as a gift from a friend who has asked me to cook many gallons of gumbo for events at his bar.

8-12 quart enameled cast iron. You can spend $50-400 depending on the brand.

I don't know where you are, but Stine has a lot of their cast iron 50% off right now. I bought 6 different ones as gifts and for myself.

Good call and I probably use mine a couple times a month for soups in the winter months. Beats pouring the soup out the pot into a blender and having that appliance to clean up.
The immersion blender cleans up real easy.

Agree on both. I also use it for blender hollandaise.
