Absolute must dos Las Vegas

Walk up and down the strip. Go into different casinos and shopping venues. Take in a show. Go downtown where the original casinos are before the strip. I would do all that before leaving LV to see other things.

Pretty broad question without knowing your age/lifestyle or the level debauchery your wanting to get into...
You trying to go jump off the Stratosphere or go watch the fountains at the Bellagio? Las Vegas is an adult's playground. You can go and do or eat whatever you want.
Valley of the fire and Hoover Dam that were mentioned are both great if you're wanting to get away from the Strip.

Linq Promenade, High Roller, Frozen Bailey's from O'Shea's, Forum Shoppes at Caesar's, Flamingo Habitat at the Flamingo, Mob Museum, Fremont Street, Observation Deck on top of The Strat, Area 51, Arts District, Bellagio Conservatory and Neon Museum.

Freemont street is pretty cool. Circus Circus has a great steakhouse that used to host Mafia bigwigs. Thumbs up on the Hoover Dam.

I've never planned Vegas
I just show up and let it happen

See Vegas from up high. Do either the High Roller (coupons for discounts almost always available if you google) Happy Half Hour or the Stratosphere 108 Drinks during happy hour, 3-7. The Foundation Room at the Mandalay Bay is another option.
Fremont is fun and good for good rules on table games and lower minimums. The D has some classic slots and one of a few Sigma Derby machines on the 2nd floor.
See the Bellagio Fountains and the Conservatory. They're iconic. The Wynn is really pretty as well.
Walk the Strip and pop in and out of the casinos dropping a $20 in a slot here and there.
See a show. There are so many choices and types...Cirque, magic, concerts, etc.

I forgot about the Sphere. It is worth seeing even if no band is playing. We saw U2 twice and hope to get back to see the Eagles. It’s an incredible place.

The Mob Museum downtown is a really cool experience if you have a few hours to kill.

Honestly LV doesn’t have too many “can’t miss” things on the strip. The hotels are owned by 2-3 companies for the most part, it’s a lot of the same. The property you stay at is more important than the things you do, because they are designed to keep you there. I’m not hating, but it’s just mostly gambling and dining, so you will have to spend to have fun in that regard. Get reservations if you find anywhere you want to go.
I actually do enjoy downtown and second that suggestion.
For as sterile and corporate as the strip is, and considering it’s in a desert, the outdoors activities around the LV area are incredible. Tons of golf and hiking within 20-30 minutes.
Either way bring chapstick, it’s dry there.

Since it’s your first time, there’ll be plenty to do on the Strip. Going to Hoover Dam will soak up a whole day.

The sphere is amazing, the movie was a bit lame but the experience was awesome. Definitely take in a show. We watched O and it was cool as shite.
Fremont Street is pretty terrible imo.
We had dinner at lago one night and had a great view of the fountains. Great experience.
The mob museum is ok. Don’t let them tell you to start anywhere other than the beginning. It gets confusing. The speakeasy at the bottom is pretty lame.
The rooftop bar in the Waldorf is called Skybar and it is incredible. Get there early.
If you find yourself in Mandalay Bay there is an awesome Irish Pub called Ri Ra that won’t break the bank. The speakeasy style bar there is pretty decent as well, called 1923 Prohibition Bar. Much better than the mob museum.
Chandelier Bar in the Cosmopolitan is a really cool spot. We also had dinner at Beauty and Essex and it was great.

Mob Museum, Zag Bagans Haunted Museum, Madame Tsusad's wax museum are all good. Absinthe was great.

Absinthe is absolutely a must do, hilarious and great acts
