Why does mayo need refrigerated?

if an unopened plastic jar of mayonnaise can sit on the shelf of a store for weeks, and in your pantry for several days, then why does it need to be put in the fridge as soon as you open it?

why can't it just stay on the shelf or cabinet?

that's where I keep mine, right next to all of the mattress tags I've removed, I didn't choose the gangsta life...

Key word. Lots of sealed foods are ok on a shelf until opened. Once opened, they require refrigeration.

Because when you open it you expose it to contamination. Bacteria reproduce at room temp, but most don't reproduce well under refrigeration.

I prefer cold Mayo but truth be told. The bar I frequent keeps it room temp. I haven’t gotten sick yet.

One is air-sealed and the other isn’t. Just like those little packets of mayo that are left out.

Mayo has eggs. It goes bad much more quickly than ketchup or mustard at room temp

Unsealed


Lots of stuff needs fridge to protect it from crud if not refrigerated.
