Depends what I’m after.

Searing in a black cast iron pan: Halibut and Grouper

Frying: Specked trout, flounder, sac a lait

At least those are my personal preferences.

Triple tail, permit and black grouper are my favorites.

A good blackened grouper sandwich may be my favorite meal on this earth

Halibut is about the best fish on the planet. It has to be flown in to our area though.

Local fish
Speckled trout
Flounder
Triple tail
Snapper
Grouper
Lemons fish
Cobia
Pompano
Redfish

In that order and they’re all really good

Red snapper is the whites fish.. but its just bland white fish. While its great, there are so many more, more flavorful fish to eat.

Grouper, Lemon fish/Cobia, Triple tail, Mahi, Other snappers (Lane, Vermillion).

Id put Tuna in its own category because its more of the Steak of the water.
