He is 100% correct. I remember restaurants paying servers like 2 dollars an hour in the 80s. The checks were so shitty, often times they didn’t even pick them up. But then they had to pool their tips and the restaurant took taxes etc out of them. Customers were basically paying the entire salary of the servers etc.

I waited tables during college and until I was married. I was making $25-40/ hour in the early 2000s which was damn good money back then minimum wage was $5.15-6.50. I was making $140-200/ shift. The issue with serving is that yes the hourly wage was good but it was really only for 3 nights a week for 4-6 hours, so it’s not like it’s a 40 hour a week job for most people so once you add your loss of hours it’s not as great of a gig if you are looking to actually be a lifer.

But a lot of European restaurants it’s a full time job. I’m not sure how the pay works out, but everyone would have to adjust: owners, employees, and customers

Hard to know what came first, culture or “crap service”, but it would be insulting in Europe if the waiter was bothering you the whole time.

Europeans spend lots of time socializing during restaurant meals, they normally stay ~2 hours.

Without free refills, there isn’t much for a server do to throughout the meal. (You can get free water if you ask, except in places where the tap water isn’t safe to drink)

I don’t notice the service in Europe to be noticeably different than here. In some ways, it’s generally better. What were your bad experiences there?

The one thing I don't understand is basing tips on a percentage of the check.

And I know there are caveats, but keeping it in simplistic terms and basing it on 20%, why should I tip a server who brings out a single $30 steak to me $6 and a server who brings out a single $10 steak to me $2? The work is the same on both.

My policy these days is -

1. If I have to come to you to receive whatever good/service I'm purchasing, no tip.
2. If you are the owner of a business that performs a service, your price is your price. I'm not tipping you.

My barber kept raising his rates during covid. He's really really good, but I'm just out of fricks to give. The price is the price. No tip.(he does own the establishment)

Yeah you probably shouldn't have been tipping him in the first place.

The only real reason to tip a barber is the ones that rent their seat because a percentage of their take is going to the house.

They also have tons of benefits in Europe. I bartending during college and waited tables and almost always made a 100-200 bucks a night if it was busy. You just had to move your arse, but I was lucky enough or good enough to just work Thursdays thur Saturdays. But you are correct maybe two people at my bar and less than 6 at the restaurant really depending on the job for a living the rest of us were students etc

My fiancée and ex used to think I was a dick head bc I only tip 15% and that’s when they are good and attentive sometimes 25% if I’m impressed.

If they are bad I will not tip.

I got in a argument with fiancée last month actually was at a restaurant and the waiter was gone the entire time did not refil drinks did not come ask for main order after apps were finished or even delivered. I waved down one of the bussers and asked him for refills plz and that I didn’t no where waiter was, he filled our drinks rest of evening and waiter showed up and said oh yall were not really thirsty I was just coming to check on yall, we ordered our food and ate then when we left I left a 0 for the tip. I stayed until she could see it and then went and told her pretty much she was a shity waiter and didn’t deserve a tip.

I went and found the busses later and slipped him a 20.

If restaurants baked the tip into the price, over time the bleeding hearts will still add “a lil extra” and before you know it we are tipping again on top of the inflated prices.
