Need a couple good Raccoon recipes

I've a huge number of coons that I plan to trap around my corn feeders. I know the first thing is make a roux. What comes after that camp cooks?

I have never cooked it and only ate it one time. Some soul brothers at work would always ask for any I came across and they cooked it by browning first then smothered down in the oven in a magnalite pot in a gravy with onions and sweet potatoes.
Make sure you remove the glands.

Stalekracker did a smoked coon, including how to remove the glands. I’m going to try it too when I wage war on the deer corn stealing bandits.

Don’t deep fry it. The meat has a natural greasy texture.

Parboil it to almost done then remove season it with whatever rub or sauce and pan sear it or roast or bbq whatever. I like it quartered with rice and brown gravy.

Inject, season and drop it in your turkey fryer. Same prep for grilling.

Last one I did came out awesome. Seasoned with the same rub I use for ribs. Put on the pellet smoker at 225 for about 2 hours then wrapped in butcher paper with hot honey and a bit of butter. Left on smoker like that until tender.

Smoke them then put them in a gumbo. Smoke coon and okra gumbo is my favorite.
Oh and the potatoe salad goes in the gumbo.

friends son killed 2 coons at the hunting club years ago when he was young...when he got back to the camp empty handed his dad asked "what did you shoot?...son said "couple of coons"...dad asked "where are they?"...
son left them and dad made him go back and get them in the dark...
I said all that to say that this is how we cooked them...cut into pieces...par boiled...then on the pit...
the kids parents didn't want any but changed their minds when the kids were tearing it up...

I've only eaten coon 1 time, but it was damn good.
They skinned and cleaned it, put it on a grill with mesquite smoke out the fundament, seemed like they were burning the crap out of the thing for about an hour, then they put it in a pressure cooker for about 30 minutes, with beer, vinegar and seasoning. It just fell apart.
The smoke and vinegar taste was in every bite.

This isn't a criticism, I'm genuinely curious. Is the goal with Coons to make them taste like the sauce that they're cooked in? Maybe a better question is does it taste any different than BBQ pulled pork after these steps?

It tasted like Carolina style pulled pork pretty much.

This for sure. Quickest way to ruin coon meat is to not remove the glands.

I once worked with a black dude that loved to hunt coon and he'd clean and cook them in the oven baked along with some sweet potatoes and it was killer.

Don't know how he seasoned them, how long he cooked them, etc. but do know it came out tender, juicy and flavorful.

Can't get his recipe since he's been dead for over 30 years now.
