What's yall go to weekday meals for supper for the family.
We do red beans, tacos and Shepard's pie pretty often. Just curious on any different ideas that are relatively quick, simple meals.

I did a roast this week- sliced an onion on the bottom of the crock pot, poured about 1.5 cups beef broth and a large can of red enchilada sauce, as a few seasonings. Shredded the roast, reduced the sauce, and made some pretty awesome Birria taco bowls with rice.

Last night I made our favorite but easiest midweek meal.
Meatball poboys and Caesar salad.
This is just frozen small Italian meatballs and marinara sauce on a small pistolette, add mozzarella and provolone.
Add a salad, makes a great meal.

I'm the cook around the house and cook in big batches most of the time. That way I put stuff in quart freezer bags and freeze to use later instead of cooking every day.
Things like 4 lbs. of red beans with smoke sausage, ham, etc., 50 beef meatballs with smaller meatballs of Italian sausage and 4 gallons of red gravy, 3 gallons of chicken and sausage gumbo, large pots of soups, etc.
Then there's the quick stuff like tacos, panne' meat, chicken wings, grilling burgers/steaks/sausage......
We eat a hot meal every night and many times the only thing I'm cooking is pasta, rice or some form of potatoes to go with what I defrosted and heated up from the freezer.

Roasting a chicken is pretty easy
I do a stir fry about once every week or two - tofu and whatever veggies are in the fridge (onions, peppers, cabbage, mushrooms). For a sauce, mix up soy sauce, oyster sauce, rice wine vinegar to taste. My wife likes tofu, you could replace that with some thin steaks or pork chops.
Alternatively, I do a lot of fried rice with bacon (or Spam), kimchee and a few eggs.

We do a lot of grilled/roasted proteins paired with vegetables. Steaks, chicken (breast or thighs), pork chops, smoked sausage; paired with roasted carrots, steamed/roasted broccoli, grilled asparagus, etc...
Sometimes we'll do a cheeseburger salad, essentially ground beef on top of a salad with cheese, pickles, and other accoutrements.

This is exactly what we do. We buy chicken thighs, pork chops/tenderloin, and ground beef in bulk from Costco and freeze in portions. Thaw a pack of thighs one day, thaw ground beef one day, thaw pork one day. Usually have leftover night on Thursday

Costco sells their rotisserie chicken for under $5 and it's a great bargain, plus well cooked.
I can't buy a raw chicken from the store, season it and cook it for less than that.
Fix a couple sides to go with it and you've got a good meal.
