The "Holy shite" reaction I had after Hardhomme from GOT was pretty memorable.

That is a good choice. Dead Freight (the one with the train heist) or Face Off (Gus vs. Walt finale) from the series another good choice. I would add Nightmare at 20,000 Feet-Twilight Zone, Turkeys Away-WKRP in Cincinnati, Pine Barrens-Sopranos, Mr. Plow-The Simpsons, Who Goes There-True Detective (with the drug house rip off), Pilot-The Shield. The biggest holy crap moment for me would be Ozymandias or Pilot.

Others have been touched on but I’ll throw one from left field.
“The Curious Thing About Women” from Dick Van Dyke show is one of the greatest comedic episode setups I’ve ever seen. Every bit of that episode is setting up for a fantastic pay off in the final scene and MTM shows off some great comedy chops.

Making a Stand - Arrested Development
“Buster had a lesson of his own to teach: that they should not use a one-armed man to scare someone.” Just joke upon joke that built up for 3 seasons. If somebody decided to watch that episode out of the blue with 0 context it would make no sense, but the jokes that have built themselves up from J Walter Weatherman, George pitting the boys against each other, the banana stand, and Oscar’s missing hand, all of it…. Chef’s kiss.

The show went downhill FAST, but it doesn't take away that early season.

My go to for this question is always Two Cathedrals from The West Wing. The Constant has already been said but its way up there too.
