Want to get her a nice watch for anniversary. I’m thinking can’t go wrong with the Cartier Tank but was wondering what else to consider. Price range $1-3k

Shinola is nice and less expensive. My wife wears hers all the time. The fancy gold ones are in the 600 to 1k range

Is she a big watch girl?
My wife is not. Thus, I got her the Citizen XC. This is a much better “one watch” than an addition to a collection. It’s not a collector’s piece. But it’s nice enough for most occasions. The thing that’s practically priceless though, is that it’s solar powered, but more importantly, it’s got atomic time. So every morning at 2am, it beams Colorado and updates the date/time. It only needs fiddling on DST days. Is solar over standard quartz or mechanical an advantage? No. Not really. Battery changes are rare. And mechanical watches are “cool.” But a watch that sets itself but looks like a normal watch the once a week she wears it? Pretty cool.
Now, if she likes watches and you’re adding a new one, this probably isn’t it. Cartier Tank is pretty classic and a great choice.

If she isn't a "watch person", do not, I repeat: do. fricking. not. get her a mechanical watch.
Fortunately, plenty of very nice quartz and springdrive watches these days, the Tank among them.
With all of that said, what is this watch for? Is it an every day watch? A dress watch? Giving a bit more direction would be helpful.

Don't overthink it get a Cartier Tank Must with the high autonomy quartz movement (unless she is a mechanical watch aficionado) and be done. It is as close to a sure bet as anything for a woman's watch. You need to try to discern what size and whether to get it on the bracelet or leather. Match the size generally to the watches she has bought for herself or wears most often and I suggest the bracelet for any watch that comes with one. Especially if you don't "have" to have a Cartier branded strap you can add a nice one for very little money to change things up at any point.

Gucci women's watches are better quality than Cartier. They are amazingly solid machines for jewelry.

Cartier Tank is the correct answer.

Setting aside the quality issue one is a fashion-oriented watch and one is a timeless classical timepiece. It is easy to see a woman wearing a Cartier Tank at her anniversary dinner 20 years from now, not so much a Gucci watch.

Get her a watch from Nordgreen. They have affordable options that look expensive.
My wife gets a lot of compliments on hers.
