I fly through Europe every so often and getting drunk on Heinekens in Amsterdam at 7 am before my connecting flight is probably my favorite flying tradition

This information is 10 years old, but Burlington, VT airport has the best breakfast diner. Was all locally sourced ingredients, fresh and well made.
