Some of the best acoustic and electric guitar work I have ever heard.

And

John Cale - Hallelujah

I know a lot of people have their own favorites of Hallelujah, but this one is my favorite.

Jimi Hendrix's cover of Bob Dylan's "All Along The Watchtower" was so transformative & definitive that Dylan famously started playing the song closer to Hendrix's version than his own original version.
