When my mom was in a hurry and had to make a quick breakfast it would be toast pancakes. Toasted bread, butter, and maple syrup.

Way better than it should be.

Salmon patties was once a week for us. I still love them. Mom would mix one egg in a can and dredge in corn meal. Just three ingredients.

And this probably sounds gross to most, but she would scramble eggs with canned salmon. Loved that too.

Mom would make Chinese spam.

Cook angel hair pasta ahs set a to the side.

Cook diced spam, chopped cabbage, fine chopped green onions, zucchini and squash all together until spam was browned.

Toss the pasta in and add soy sauce. Will make every once in a while.


She would also make:
canned salmon patties- only thing she made I hated.
Sauerkraut and hot dogs - haven't eaten in years might have to try it.

Tuna patties, tuna, egg, crumbled saltines and fry in a pan.

Served with canned fruit cocktail and Jello cheesescake.

sometimes we'd do salmon patties other times wed do mackerel patties.

loved me some mackerel patties

My man

My dad worked shift work and a lot of nights. Loved when me and mom would go to Lafondas together.

I really miss that place. Big part of my childhood. Both sets of grandparents and sometimes aunts and uncles. A table for 10 people sometimes. Miss those days.

Used to take deviled ham sandwiches to school a lot. I'll still grab a can every few months for the nostalgia.

Grew up with a single mom and not a lot of money, so we were really good with making the best of it. If we did not have leftovers from my grandmother’s house, some of my favorites were:

-Shake & bake chicken wings — I used to crush these!
-Brinner — still one of my favorites. (Breakfast for dinner). Fried ham (never had bacon) canned biscuits and steen’s syrup
-Beef & Vegetable soup

If I was lucky enough to have a few extra bucks I’d walk over to the butcher shop down the street and pick up some boudin. The owner was friends with my pawpaw, so if he ever saw me he would give me a little extra. Sad, but those days are gone now.

We went to a pretty upscale dinner here in Birmingham last night, and had their "angle" biscuits (not canned) with whipped butter and cane syrup for an appetizer..... I had to ask if it was Steen's because the taste was clear to me, and of course it was. The server said at one point they had to try another syrup and it wasn't the same at all.

So, poor Louisiana breakfast has now been elevated to high cuisine
