Staying 2 extra days at the end of a river cruise-
Any suggestions for any interesting sites to see or places to go?

Definitely do a Rijsttafel...that is basically like a large tasting menu at an Indonesian restaurant and a whole bunch of stuff will come out. It translates to Rice Table. Indonesian food is huge in Amsterdam (long colonial history between the two places) and its a tradition there, like curry in London now. Its awesome and a cool experience. Their are a ton of Indonesian restaurants.
Also most of the time a "coffee shop" does not serve coffee. They serve weed.
(And I think currently tourists are technically banned from them)

Check out the Rijksmuseum and the Anne Frank House.
Those are the two most obvious things. Go to the Red Light District and check out a coffee shop.

Walk the Prinsengracht, Keizergracht and Herengracht canals. Stop and chill w/ a dutch beer at Proeflokaal Arendsnest (bar that serves only dutch craft beer). They have outdoor tables along the Herengracht canal. Cafe Spuyt (my favorite) Wildeman and Cafe Gollem are good for Belgian beers such as Cantillion and Westvleteren.

This. We always have bikes and never go into the center. The Overtoom area, de Pijp, Oost area, the area around the Foodhallen are all good areas full of cafes and way less tourists. There is also a free ferry (take the IJ ferry) behind the train station over to Noordilicht that has some cool cafes. Cafe Noordilicht if you like hippies. Also NDSM-warehouses is a giant old warehouse full of working artist who display there work. Its free to walk around inside and check out different studios.

Heineken Experience is worth the visit. And the beer tastes so much better there. Different ingredients than in the US

Uh, no...other than water it's the same as what is brewed in the US. And even at that, the US water is treated so it's an exact replica of the Dutch water. You're just getting it very fresh at their place in Amsterdam. The green bottles most people drink out of have a negative effect on the beer, more so than brown bottles.

Just got back, like others said the museum’s and Ann Frank, just book ahead of time as they all sell out. Also a canal cruise is interesting. Also I would recommend a cultural tour of the red light. It was really interesting to learn the history of the area including the coffee shops & red light dist.

Do a private canal cruise. Best thing we did in Amsterdam. Two hours of good food and views. Only $150 more for the private boat you aren’t sharing with 25 people.

Friends of ours that live there just bought a boat. Can't wait to cruise the canals next summer eating smoked sardines and Gouda cheese.

Anne Frank museum was really crowded. The Van Gogh museum is awesome. Also we went to Our Lord in the Attic Museum. A hidden Catholic Church from the time when protestants ruled the city and it was illegal. Its hidden in a warehouse and pretty cool.

Amsterdam is one of my favorite cities in the world.
Beyond those things already mentioned, you can make an entire day of just walking the streets of the old town. Lots of beautiful places in that city.
Or you could just spend your time in the red light district.
