I've made it with mushrooms before and it's good. But a long time ago we added small cubes of eggplant to sneak some veggies past the kids, and we liked it so much we almost always include eggplant now.

Well, I would argue that the premise itself is unnecessary (especially for something like eggplant), but I realize that I'm pissing against the wind on that.
So, notwithstanding that, we now have the kids tricked into eating what likely amounts to a few small bites in the aggregate of a vegetable with little (or at least questionable) nutritional value. Is the juice really worth the squeeze?
Just seems like a ridiculous amount of effort for a parental "victory".

In and of itself, of course it isn't.
If the catalyst for doing so was to find some way to "sneak vegetables past the kids", just seems odd to me, as I said.

So does Gino’s and everyone (myself included) loves their lasagna.
I haven’t made red sauce with mushrooms and olives in a long time, but I like it a lot. I consider that the “American” — or even just the southern — way of making red sauce. My mom always used it in her spaghetti sauce.

I went to an Eagle Scout ceremony and they served ‘gumbo’ at the reception that had mushrooms in it. Whatever it was was pretty good, but gumbo it was not.
