Change my mind.
I'd agree, but not compared to Don's and Best stop. Haven't had kartchners yet, and I thought it was pretty bold if them to drop shop right in the middle of all of them. That wasn't accidental, so they must have something there. However, I will say this, don't get the regular boudin, get Billy's smoked boudin, that is night and day different and better.

The boudin balls with melted pepper Jack cheese in them are awesome.
I also learned that if you take Polynesian sauce from CFA and pour that on those, it is heavenly

Overrated? Maybe. My biggest issue with Billy’s is that it takes an hour anytime you go to get anything. Billy’s is at least consistent.
Best Stop, Nu-Nu’s are also solid around those parts. Nu-nu’s is my go to. Mowata store also has solid boudin if I’m in a rush or it’s early morning but I’m not certain they make their own.
Also solid.

Billy's is the only boudin that NEVER, and I do mean NEVER has those g-damned little clumps of fat.

100% correct. I got some on a drive home from Houston and it had very little flavor, tasted watery

Amazed how expensive it was a few months ago when I came through town on my way back home from Mardi Gras. It cost me over $100 to fill an ice chest. It way better than anything I can get in DFW but the egg rolls were over $2 each. A 5 pack of boudin balls was almost $18. I had my heart set on them to have in freezer. Probably won’t even stop next time. Get some local stuff in Baton Rouge before I leave town.

The Billy's behind the train museum in Opelousas was really good back in the 90s...I would always go with my grandpa when he'd meet my parents halfway from BR for me to go spend the summers in Pineville. I think he sold his recipe around 2000 and it was never the same. Too much rice from the new guy
