I have one (still need to eat some ham off)
I’ve heard people rave about it, but I don’t like sweet in my savory foods.

I don’t like sweet tomato sauces etc.

Should I do it?

White beans?

I'm with you on the sweet. It might be good in baked beans, though.

Do it.

The sweet is on the outside mostly. Once the ham is removed, I don't think there is much sweet left. At least i do not recall it.

I usually just toss the honey baked ham bones, or give it to a neighbor to give to their dog.

Too sweet for my taste in beans, so no real value for me to keep it.

Thank you for your support!

You could also simmer the bone to make the stock first and see how tastes before deciding to use it for stock in a dish. You could then use the stock if you wish.

I think I've done it before and it turned out fine. It's not like you're tossing in half a pecan pie in a pot of white beans. Most of the sweet taste in honey baked ham is in the glaze.

This. I use a HB ham bone in red beans every year after the holidays. They don't taste sweet.

Done it many times and always turns out good. I always add a good smoked sausage too.

I've done it before with a pot of greens. Turned out fine. If you still have doubts, do what the other poster suggested, boil it and make a stock, then see if you like the stock.

I agree that the bone would probably be fine in greens. I prefer a smoky flavor, but you could add some bacon or a hock to balance if you wish.

I like to make a stock with the bone then use the stock and leftover scraps of ham to make a ham and egg pie.

The best beans ever are made with a honeybaked ham bone. Red beans or white beans it doesn't matter. Just try it.

Honey baked ham bone is good, but sweet. The best trick used to be the Chisesi ham rinds from the old Zuppardos. I haven't found them in the new one yet though
