Do you know one? How do you deal with them?
"A person who makes illogical and counterintuitive arguments to justify their actions and believes they have prevailed despite evidence to the contrary is often referred to as a "sophist" or described as engaging in "sophistry." Sophistry involves using deceptive or fallacious reasoning to make a case appear stronger or more convincing than it actually is. Sophists were historically ancient Greek philosophers and rhetoricians who were skilled in persuasion and argumentation, often emphasizing the art of persuasion over the pursuit of truth or logical consistency. The term "sophist" is sometimes used pejoratively to describe someone who engages in manipulative or deceptive argumentation to win an argument or achieve their goals."

Depends on whether you met a Sophist in the morning or you met them all day.

Because that is not what a sophist is. They share more in common with polemicists, contrarians, and devil's advocates than liars.
