Chattanooga. Hiking, whitewater rafting, biking, etc. Has Aquarium, great walking downtown area.

If I had a three days in the week and only wanted to drive I would go to the Marriott Grand Hotel in Point Clear Alabama. Chill out with drinks by the pool and maybe hit up nearby Fairhope for a visit.

I would try and get away from the heat and head to some elevation in N. Georgia, E. Tennessee, or W. North Carolina. If flying is an option, Breckenridge CO would be the top choice. Can't beat the weather this time of year.
