Using points vs saving them for something "better"

What is y'alls thoughts on this, do you save up till you reach a certain point threshold or spend as you get?
With my Delta Amex I tend to spend for upgrades here and there because they seem to never offer deals out of New Orleans or Baton Rouge. Like I saw a San Diego to Honolulu for 10k Miles recently and was just like "damn" because when I looked at miles to New York it was 125k
With my Venture X card I've kinda saved those and looking for a large trip with everything being paid for in points. I use the card daily and book all hotels on it (AMEX for flights) and thanks to that welcome bonus I have enough currently for two to fly RT to a few places in Europe this summer. Debating saving and continuing to accumulate and hope that I can make multiple trips a year while accumulating.

Spend as I go. I collect enough from Southwest and haven't bought a ticket in 6 years.
I need a way to collect from Delta or American

Spend US domestic miles since they are dynamically prices anyway or use of upgrades.
Save Amex/chase points until there is a really good deal to book through a partner airline or hotel

Is there a particular site, blog, guide, etc to learn how to best utilize AMEX points that anyone is aware of?

Delta AMEX points use be on on Delta.com as you could see what deals they had at the time.... right now I'm unsure but I follow thepointsguy and he gives some deals.

Use brand loyal points as I need to. I’ve got Capital One travel points saved up to use for an emergency.

I have Chase for points but I only use them if I can find good value for them. If not I'd rather just pay for it myself then waste a huge chunk of points
Like last week I found a deal through Hyatt for like 10k a night in downtown Toronto so I jumped all over that. Every thing else I looked at wasn't nearly good enough so I was going to just pay until I found that

I used to save them for big items like across the pond business but the reality is they continue to be devalued. I spend them now way more frequently.

We usually use one card all the time that we bank and splurge when we get a couple hundred thousand (Cap 1 Venture). Then we rotate through a few others and use those points for more frequent travel (Chase Sapphire , Southwest, Visa, etc)
So, we may use Southwest Visa and Chase for economy airfare and park tickets to Disney (for example) then use Cap 1 Venture for Business internationally.

What is the other option with Southwest? You really can’t upgrade to “something better” with them, right?

Not that I know of. I just buy tickets.

I burn the hell out of Chase points at Hyatt hotels. With two kids I book suites everywhere so the cpp is usually north of 3.
Have a ton of Amex/AA points so my next business class airfare is already set. Enough alliance partners to where I don't Chase points specifically to access what I need.
As for your Delta card, I'd burn because of the aptly named Skypesos.

Use them as quickly as I earn them.
They go down in value all the time.

I'll generally cash in some Bonvoy points for business travel. I accumulate a lot of Amex points and I either transfer them or spend them for European trips for flights and hotels.

Earn, churn and burn. My record was 62 CC (4 players) in 2018. What a time to be alive lol.

Save and use when the value is great. Maxmilespoints is a good Instagram user to follow.
Examples of some really great value we have used them for: 1st class for 70k chase points transferred to EVA air to Vietnam. Ticket would have been $3k otherwise.
Park Hyatt Beaver Creek. I can’t remember the points, but it was substantially lower than the cost of the room.
Currently saving for first class on Emirates and overwater bungalow for a Marriott property.
