Where should we go? Leaving 18 month old at home, so want to be able to drive no further than three hours if possible. We love relaxing, but also love enjoying new towns.

The Grand Hotel in Fairhope fits the bill.

Grand Hotel is a bit pricey, no? I really don't want to spend more than $1,500 on stay for a Thursday-Sunday if possible. Shouldve included that in OP.

Bay St. Louis is great. Wife and I are going there for a couple nights next week. Ton of restaurants, good shopping for the wife, nice beach (minus the water). We try to go there for a little weekend getaway at least once a year. It's an hour from Nola so that a plus as well. Might not be a new town for y'all though.

3hrs from Nola, your options are limited to the beach this time of year. Anywhere along the Gulf of America from Fort Morgan east.

If you can stretch it another hour or so I would go to Destin.
Other than that, the Grand Hotel is the best idea.
In the other direction there is Natchez.

If you go three hours in any other direction you’ll want to turn around and go home

Fort Morgan isn’t a bad suggestion. Beach, nice dinner. Golf or rent a boat.
