Youtube TV is the real deal. I recently switched from Windows Media Center and Cox and haven't looked back. The cloud-based DVR is liberating in more ways than one, including letting me move on from Windows 8.1 to Windows 10.
The YTTV apps are fine on my Roku TV, Apple TV, iPhone, and Samsung tablet. However, I also use it on my PC, and it drops frames in Chrome, which I figured should work best, even though I've always thought Chrome sucked compared to Firefox. Turns out, it works perfectly in Firefox. Those are the only two supported browsers so far.
The nice thing about the PC is that it's the only platform I know of that supports accelerated playback, e.g. 1.25x. I wish the apps did. All the platforms allow you to choose quality, e.g. 480p to 1080p, which is important for managing bandwidth, and each app has independent settings.
I also tried Hulu and DirecTV Now a few months ago, and they didn't have all the features of YTTV I've just talked about. What kept me from switching to YTTV back then was the stupid DVR behavior, which replaced many recorded shows with On Demand versions having unskippable commercials, which would turn into the recorded versions having skippable commercials within a few days, depending on the broadcaster. A few weeks ago, that restriction was removed except for channels owned by CBS. I could live with that, so I switched.

Just get one of the current options (DTV now, sling, etc) amd download all the apps (ESPN, HBO, etc) I never open my directv now, but am watching the ESPN app right now.

My options are:
-Kodi, Couch Potato
Kodi takes care of most of needs. You need to know how to update. Not that big of a deal.
Through Kodi, I use (not so much anymore) but Couch potato. That will download whatever title I am looking for at whatever resolution I am looking for via usenet. Generally speaking, if the episode comes on at 8, it's downloaded into a library with art work and everything by 9. It also does that for movies too.
These 2 combined keeps me aware of any new episodes. It alerts me.
- As for a streaming service, there are many and they ALL give you either month to month or a TRAIL. I highly suggest you try them all.
I loved sling. They had previous episodes etc....
I hated YouTube. Felt the guide and all was not user friendly.
One not mentioned here in this thread is Fubo Tv. The only reason I am mentioning it is due to the 7 day free trial. https://www.fubo.tv/welcome
HULU tv is $40 per month, but it includes their normal streaming services.
Then there is Philo. It's $16 per month with 42 channels. No Sports. https://help.philo.com/hc/en-us/articles/360006214074-Channel-Packages
If you have an ATT phone/servie…. see if it qualifies you for ATT WatchTv. https://www.attwatchtv.com/. If Not, this is $15 per month. Not bad selection.

The kicker there is locals....it depends on where you live. I live in the Lafayette area and the only local I get on DTV Now is Fox....but I have an antenna so no big deal.

My only experience is with PSVue(have netflix as well). Had similar requirements as you and it has worked great. No issues at all. I got an HD antenna for my local channels but PSVue now offers all locals except CBS. I have used a PS3 and Fire Stick. The Fire Stick works better than the PS3 but that could be due to its age. Best part was I took the Fire Stick with us on vacation so the 2 year old had access to the movies and mickey mouse when needed. Dont use the DVR much but it is there and is nice.

We get all of the locals in BR with YouTubeTV. I've enjoyed it. Switched from SlingTV. I've also tried Vue.
