Some of my favorites.

pocketcasts - for podcasts

google opinion rewards - quick surveys which get you money for the play store. Always answer honestly. They will give you the opportunity to lie. If you do you won't get any more.

timely - alarm clock

waze - gps

poweramp - only if you like to spend time organizing and tweaking your music. If not stick with something more simple.

If you are coming from iOS be sure to set up Google Now. Set up your always listening OK Google. It works even if the phone is asleep.

Nova Launcher-Allows for more customization of your desktop and app drawer, though I plan to stick with Pixel Launcher for awhile.

Flamingo-Twitter app with material design.

Sync for Reddit-There are several good reddit apps. This is my favorite.

Waze is crucial. It'll even warn you about traffic cameras.

Office Lens is nice. Uber. Gasbuddy.

One of the main things I liked about Android is the customization. Also coming from the iPhone. How do you make it so that certain gestures do certain things?

Get nova launcher and play with it. It has a lot of gesture options and customization features.

I know that Nova Launcher allows for gestures to do certain things.

ETA: Ham Solo nailed it.

A few of my settings:
Swipe up - App drawer (removed the drawer button)
Swipe down - notifications
Double tap - Google now
Swipe down (2-fingers) - voice search

its really scary that google knows if you're lying But it's true.. if you answer that you were some where you werent you get paid like 2 cents, but when you answer honestly you normally get 25 cents or more.

Is "rooting" required in order to turn my phone into a hotspot? Or is there an app that can do this, regardless of my carrier's network settings?

you'll have to do a search about pixel on Sprint. Used to, the carrier supplied phone disabled this feature. Now that google is shipping vanilla android, this feature my not be blocked on the pixel and can be used on your network. I know all of my phones from google has been fine to use for hotspots.

I've found a pretty good alternative to this without root. This works equally as well, at least in Chrome.

On Sprint, it looks as if hotspot enabling is blocked.
