And you get a more even heating. Electric is dogshit, and induction may be better than dogshit electric, but it can't touch gas.
If you want induction, knock yourself out. But don't try to convince a bunch of Southern men who know their way around a kitchen that your green electric is better than gas.

Lol, my grandfather was a fire chief. You have no idea how many people have burned down their houses playing a game of chicken with a match and a gas line.
And the government can just as easily turn off your gas line as they can with electricity. Unless of course you are living the double wide dream with a propane tank right next to you...

My family has several restaurants and I have worked in each one for many years. I also had an induction stove in my house when I bought it.
The induction stove was the most finicky appliance I have ever dealt with. I'll admit when it worked, and I mean when it worked, it was awesome. But it was so unreliable. They don't work with every pot and pan. Sometimes it wouldnt even work with pots sold as "induction pots" and would end up not heating midway through your cooking. It was so bad I tossed it out and went back to traditional electric.
There is no way that I can imagine induction being used in a commercial application, especially given the reliability of gas ranges. If they are being used, I'm willing to bet they are in some hipster restaurant that probably rarely uses their stove.

Wut. I prefer gas but gas isn't run in my neighborhood and I wasn't interested in a trashy looking submarine in the back yard. Most of the things people are saying about gas are spot-on, most of the things they're saying about electric are somewhat correct but exaggerated if you're using a decent range.
But now electric has less even heating than gas?
