Both the taser and pepper spray incapacitate the victim leading the victim to fear for worse. This is just the case of two dumbasses meeting and getting dumbass actions.

He experiences the following in rapid succession (fractions of a second)
1. He confronts a guy that he (arguably) thinks is a threat to the job he was hired to do, without drawing his weapon.
2. Said guy strikes him on the head, so he starts to draw his weapon. POSSIBLY he sees that said guy has SOMETHING in his other hand.
3. POP/BANG! Something explodes a few feet from him. He interprets it as an attack and fires his weapon in response to that threat.
That is how I would sell it to a jury, based upon the limited info now available. Details might change as facts develop.

Question for the board: What was on the victim’s shirt? It appeared to be BLM, but may have also included an anti-BLM message. I can’t make it out.

There will be no selling. If he is a licensed (or equivalent) security professional in the state of Colorado his training record (or lack thereof) is going to become a matter of public record. And he is going to be eviscerated.
Just a cursory review of the video show multiple tactical errors by him (client in front of and to his dominant hand which is creating a potential flagging situation, poor situational awareness of the unfolding confrontation, letting him go to the narrow/constricted part of the confrontation in front of him to the right, not steering him into the open, safer area to his left, becoming a part of the confrontation, not de-escalating et al).
He is looking at prison. Period.

What is not seen (but I believe will eventually come out - speculation on my part) is Dolloff went directly to the victim and verbally confronted him and the victim responded with a push (think of the personal foul flag in football, you always catch the second guy). That is when both drew their protective measures (mace versus a pistol).

I agree with your outline on the defense’s approach. I don’t know if it will be successful, but I suppose that mostly depends on the jury.
Can you imagine if law stated that you could use deadly force against mace at these protests? There would be a trail of bodies.
