I'm working offshore in Eloi Bay. After 5, I can fish. Im on a platform that's 20 ft high. I can only get 1/3 to 1/2 the fish I hook up on the crating. I'm mostly hooking pretty big trout 16-20 inches. There are also some reds there. I'm using a 7 ft 10-26 lb rated Ugly Stick with threaded line. What can I do to keep more hooked that high up?

Try using a treble hook for the trout. You can also try a drop net on a rope for the redfish.

I would love to see someone trying to gaff a 16" trout from 20' up

You could possibly rig up a net or bucket at a fixed height over the water and kinda horse the fish into there and then pull it up.

Switch to a treble hook and you will most likely not have any more problems. I would also get a medium/heavy rod so you can horse them up

$3 vs $20

OP, if you have a welder on your platford get him to make you a fish ring.

You take a metal ring about 10-12" in diameter, cut a slit in it big enough to pass your string through, then on the inside of the ring you weld 4 small metal rods about 1" long, then tie a piece of 1/4" rope to it. When you catch a nice fish you slide the string through the ring, lower it down over the fish with the rope and pull it up. Ask an old timer on the platform, they'll know what to do.

have used this many time on larger fish, for trout I used to use a small basket with a split ring to slip over the line, just lower on the 1/4" line and it's pretty easy to get them in the basket.

the fish ring is best for smaller fish but back in the day for large ajs grouper lemons etc we also had a large treble hook (like they throw on swamp people to hook alligators), lower the hook on a rope drag the fish over hook, pull up the hook and snag the fish, it might take a couple of tries but it works

A heavy action rod, 50lb braided line or better, and a treble hook like suggested. Also if you can get a drop net tied to the rail and dropped to the water that will make netting easy.

This is what I always see people using on the pier.

Fishing from a platform is just like a pier for the OP. Now when you get offshore not many people get how different offshore fishing is from a boat to a platform.
