Ate it once in Singapore. It wasn’t bad. It was delicious compared to the shark fin soup, sea cucumber, and uni.

Jack Crevalle make some mean fish tacos if you soak the filets in milk for a little bit before cooking

11.75" speckled trout

Gaff top and sheeps head is pretty good. Keep white trout if we cooking them that weekend.

I’m from St Mary parish. Plenty gou in that area with the basin, calumet cut, Baldwin canal.

I have been told the stingray meat is similar to scallop. And clean it by laying it flat and punching a biscuit cutter through the wings and then skin the medallions.

ETA- had blue marlin and didn’t particularly care for it. How’d you like it?

Had a tail wrapped blue die on us a few years back. shite was nasty af.

I dont keep any odd fish others toss back.

Goo is short for Gaspergou, a fresh water drum, sometimes known as Buffalo Fish.

Choupique are bowfin's, a freshwater bottom dwellers that many folk liken to the snakehead but they are 2 different species.

Gotcha. Thanks. We got bowfins but I’ve never seen a freshwater drum around south Alabama.

Goo makes a good courtbouillon much like a large redfish.

I've used choupique to make fish cakes after boiling them in seafood boil and picking the meat. Same with garfish to make gar balls.

I especially like shark meat since there are no bones to deal with and it is an excellent choice to grill and baste with garlic/butter/lemon sauce as it cooks.

I've caught a bunch of goo over the years out of the Mississippi River. I caught one just a few months ago that went a good 5 lbs. that I cleaned and cut up for frying. Like many species of drum, they do sometimes get worms in the meat but they do no harm and are easily removed even though if thoroughly cooked, they won't harm you.

My grandfather was from Evergreen and would keep a Gou in a heartbeat. It must be an Avoyelles thing.

I know my late father-in-law, also from Mansura in Avoyelles Parish would love to bake a goo courtbouillon.

A former coworker lived on grand isle her whole life and her favorite fish was mullet from the gulf. Said she would scale them and filet them off the bone Salt pepper and butter and pan fry them. I never have done it but am tempted to try it.

My grandfather used to spend his weekends drinking ole mule in the red can and fishing specifically for gou. My grandmother would cook a mean couvillion with it. Ive not yet master the couvillion. One of these days ill get it perfect.

Eta: i dont keep much other than bass, catfish, and bream. I typically have enough catfish from one weekend setting lines in the summer to last the year, so i often dont keep anything i catch, at all.
