Want feedback on their Cajun smoked sausage, what’s the spice level ? Have tried the Jalapeño Cheese and Pineapple Pepperjack but I’d like to try something different

My dad gets me the pineapple and pepper jack from there. Everyone really likes it.

It’s been a couple of years, but I remember it being fairly mild.

Same. Van’s has always been really good every time I’ve ever had it, no matter what flavor.

I agree, enough that we make a 3 hour drive every year from SW AL to drop off deer for sausage. Luckily this year I have someone going to pick up a batch and can send mine by them.

I use to process deer at my bil store, the secret to good sausage is pork fat.

For deer burgers it is beef fat.

The last deer Vann's processed for me was full of hair when I got it back. As I washed the meat thoroughly, I knew I hadn't gotten my deer back.

Dwight's off 55 near Terry is much better and makes the best deer sausage, I know folks from Greenwood who drive 2 hours to drop deer off at Dwights, just for the sausage. He's an ornery ole cuss though, and if you get side ways with him, you'll libel to be catching hands in the parking lot.

Where is this Vann’s located. Looking for a place that will do jalapeño and cheese sausage. That pineapple and pepper jack sounds awesome.

A lot of processors do it nowadays. Main thing is to make sure they’re putting enough cheese in and using pineapple chunks instead of juice.

Have had some with just pineapple juice in it, and it sucks. And some processors don’t use enough cheese. Van’s does a good job of using a lot of cheese and chunks.

Milner’s around Yazoo City is good, too. Always consistent.

There's a place off I-55 between Mccomb and Hammond that makes an awesome Hawaiian teriyaki sausage. I can't for the life of me recall the name or exactly where. Anyone know the place?

Stricks bbq meat market in Hattiesburg isn’t mentioned much, and I’m not sure if they still process, but they used to do a really good pineapple pepper Jack sausage

Vine's in McComb. They also have a smokehouse in Centreville. I've been eating their deer sausage for 50 years. Excellent.

Are you thinking of Dwight’s on 18, near raymond? They have great sausage as does his ex-wife’s place, Stacie’s in Utica.

Rutn and Cutn in crystal springs has good sausage too.

Vanns has always been the best to me, but I agree you don’t get your own deer back so if that’s a concern look elsewhere.

How’d I miss this connection? My cousin uses Van’s, I’ve been using Stacie. Don’t miss the snack sticks that come in all the same flavors as the sausage. And everyone I’ve given any to say the tamales are the best they’ve had. Back to OP, Van’s is pretty mild compared to some, also a bit rougher grind, which I really like. Cuz and I always swap out a few packs.

Those Greenwood folks should try BB's. I do the opposite. I usually drop a deer off at both Dwights and BB's depending where I shot it. BB's is better in my Opinion.

Vanns man don't use those guys. they mix up all the meat, you are not getting your deer, and last season and half they had to use substitutes for pork fat. Better off using a smaller outfit.
